Boiled Chocolate Raisin Cake

Ingredients

  • 80 g Maida/All purpose flour
  • 60 g Self raising flour
  • 1/2 tsp Baking soda
  • 160 g Raisin
  • 3 tbsp Cocoa powder
  • 1 tbsp Instant coffee powder
  • 1 tsp Cinnamon powder
  • 1/4 tsp Nutmeg powder
  • 1/2 tsp Clove powder
  • 1/8 tsp Salt
  • 70 g Granulated sugar
  • 40 g Brown sugar
  • 125 g Salted butter
  • 250 ml Hot water

Directions

Pre heat the oven at 150 degrees C for 15 minutes.Line a 6” aluminium pan with parchment sheet. Sift all purpose flour, soda powder and self raising flour thrice.

In a large heavy bottom saucepan , mix raisins, sugar,butter, salt, cinnamon powder, nutmeg, clove powder, cocoa, instant coffee powder and hot water.

Turn on the heat and boil it for 6-7 minutes.Keep stirring.

Turn off the heat.Allow it to cool for 4-5 minutes.

Now gently fold in the sifted ingredients to the boiled mixture.

Transfer the batter to the prepared tin.

Bake for 45-50 minutes at 150 degrees C or until done.
