Blueberry Walnut Cake
Ingredients
- 125 g All purpose flour/ Maida
- 1/2 tsp Baking powder
- 1/4 tsp Baking soda
- 110 g Salted butter
- 100 g Granulated sugar
- 1 count Egg
- 1/4 cup Luke warm milk
- 6 tbsp Water
- 10 count Dried Blueberries
- 5-6 Walnuts
- 1 tsp Cardamom powder
For the glaze
- 1/2 cup Icing sugar
- 1 tbsp Milk
- 1 tsp Cardamom powder
- 1/4 tsp Salt
Directions
Grease and dust a 6” aluminium pan.
Lightly toast the walnuts on low flame.Coarsely ground the walnuts .
Chop the berries finely.
Pre heat the oven at 150 degrees C.
Sift the flour, baking powder and baking soda thrice.
Cream butter and sugar.
Add gently beaten egg and freshly ground cardamom.
Add the sifted flour and lukewarm milk.
Gently fold the batter using a spatula.
Add walnuts, blueberries and water.
Fold the batter very gently.
Transfer the batter into the prepared tin.
Bake for 40-45 minutes until done.
Remove the cake from the tin to a wire rack.
Let it cool well.
Meanwhile prepare the glaze.
Mix icing sugar, milk,cardamom powder and salt well. Keep stirring until the consistency is thick. Refrigerate the glaze for 30 minutes.
Pour over the cake and serve.
