Blueberry Orange Cheesecake Ice Cream

Ingredients

  • 1 cup Fresh blueberries
  • 2 tbsp Orange zest
  • 3 tbsp Orange juice
  • 3 tbsp Water
  • 4 tbsp Sugar
  • 1 cup Condensed milk
  • 1/2 cup Cream cheese
  • 1 cup Whipping cream
  • 1/3 cup Powdered crackers

Directions

In a heavy bottom saucepan, cook blueberries, orange zest, orange juice, water and sugar on low flame for 3-4 minutes. Keep stirring. Let it thicken. Turn off the heat. Allow it to cool well. Refrigerate it for 20 minutes.

In a bowl, beat cream cheese well.Add condensed milk. Keep beating on low speed.

Now in a separate bowl , beat the whipping cream until stiff.

Now slowly mix the fruit compote, condensed milk mixture and whipping cream together.

Transfer it to an airtight container. Now gently fold in the powdered crackers.

Cover the container with parchment sheet and cling wrap it..

Freeze it for at least 8 hrs or freeze it overnight.
