Blue Pea Cherry Bread

Ingredients

For the flavour

  • 10-12 count Blue Pea flowers (dried)
  • 2 cup Water

For the dough

  • 2 1/2 cup All purpose flour/Maida
  • 3/4 tsp Instant dry yeast
  • 1 tbsp Sugar
  • 3/4 tsp Salt
  • 1 tbsp Melted butter
  • 1/3 cup Maraschino cherries chopped

Directions

Boil two cups of water . Add blue Pea flowers. Continue boiling on low heat . Let the water reduce to 1 cup. Turn off the heat. Let it cool well. Pass the liquid through a strainer. Keep it liquid ready.

For the dough

Mix all the dry ingredients except cherries together.

Add the liquid. Knead the dough for 6 minutes.

Add melted butter.

Knead for another 3-4 minutes.

Shape the dough into a ball.

Place it in a well oiled bowl.

Cover it with cling film. Allow it to rise.

Let the dough double in volume.

Punch down the dough gently. Add the chopped cherries.

Knead for a minute or two.

Shape it into a loaf.

Transfer the dough into a well greased 8”x3.5” aluminium bread tin.

Cover it with cling film.

Let the dough rise until it touches the rim of the loaf tin.

Meanwhile per heat the oven at 180 degrees C. Turn on both the rods.

Cover the baking tin with aluminium foil. Make a tent with aluminium foil.

Place it into the oven.

Bake for 25 minutes.

Take the tin out of the oven. Remove the aluminium foil.

Egg wash the dough.

Place it back into the oven.

Bake for 4-5 minutes until the crust is evenly brown.

Turn off the heat.

Remove the loaf from the pan.

Allow the bread to cool well before slicing.
