Berry and Nut cake

Ingredients
- 125 g All purpose flour/ Maida
- 1/2 tsp Baking powder
- 115 g Salted butter
- 100 g Granulated sugar
- 40 g Mixed berry and nuts
- 3 g Orange zest
- 1 1/2 tbsp Orange juice
- 1/4 cup Warm milk
- 2 count Eggs

Pre heat the oven at 150 degrees C . Grease and dust a 6” pan. Chop the berries and nuts. I used dried cranberry, raisin, blueberries, cashew nut , hazelnut..

Sift flour and baking powder thrice. Remove the pith using a knife and make a paste of orange peel.

Powder granulated sugar and sift it thrice.

In a bowl, cream butter and powdered sugar well . Add orange peel paste.

Add gently beaten egg .

Fold in sifted flour, milk and orange juice.

Now gently fold in berries and nuts.

The batter should be of dropping consistency.

Now transfer the batter into the prepared pan.

Bake for 35-40 mins until done.
