Banana Sponge Cake

Ingredients

  • 1 cup All purpose flour/Maida
  • 1 tsp Baking powder
  • 3/4 cup Powdered sugar
  • 3 count Egg whites
  • 3 count Egg yolks
  • 3 tbsp Water
  • 1/4 cup Ripe banana mashed
  • 2 tbsp Water
  • 1 tsp Nutmeg powder
  • 1 tsp Cinnamon powder
  • 1/2 tsp Cardamom powder
  • 1/2 tsp Dry ginger powder

Grease and dust a 8” aluminium pan. Sift the flour and the spices thrice.

Separate the eggs.

Keep the mashed banana and powdered sugar ready.

Using a hand mixer, beat the egg whites and 1/4 cup of powdered sugar until stiff. Keep it aside.

Now, beat the egg yolks, 3 tbsp water and rest of the powdered sugar until the mixture is pale yellow in colour.

Gently fold in the dry ingredients and egg whites. Add water 2 tbsp of water if the batter is too thick.

Bake for 12 minutes at 140 degrees C.
