Banana Pistachio Poppyseed Muffins

Ingredients

  • 1 cup Self raising flour
  • 1/8 tsp Soda powder
  • 1/3 cup Castor sugar
  • 1 count Egg
  • 7 tbsp Melted butter
  • 4 tbsp Milk
  • 1/3 cup Over ripe banana mashed
  • 1 tsp Vanilla essence
  • 1/4 cup Ground pistachios
  • 2 tbsp Blue poppy seed
  • 1 tbsp Sour cream
  • 1/3 cup Raisins

Directions

Pre heat the oven at 140 degrees C.

Grease and dust the muffin tin.

Beat egg, sugar, butter and milk together using a whisk.

Add vanilla essence and mashed bananas. Keep it aside.

Now mix flour, raisin, poppyseeds and ground pistachios together.

Gently fold both wet ingredients and dry ingredients together. Do not stir the batter.

Transfer the batter to the prepared muffin tin. I’m using mini muffin tins.

Bake for 18-20 minutes or until done.
