Banana Cherry cake...

Ingredients
- 1 cup All purpose flour/ Maida
- 1/2 tsp Baking powder
- 1/2 tsp Baking soda
- 1/4 cup Salted butter
- Granulated sugar 1/2 cup+ 2 tbsp
- 1 count Egg
- 3 tbsp Thick curd
- Vanilla essence few drops
- 1/3 cup Canned cherries cut into small pieces
- 1 tbsp Sugar
- 1 tbsp Water
- Pink colour ( 0ptional)
- Banana purée 1/3 cup +2tbsp (overripe banana)
Directions

Cook the sliced cherries with 1 tbsp of sugar and 1tbsp of water for 2 minutes.Add pink colour if needed.

Pre heat the oven at 150 degree C. Sift the flour, baking powder and soda powder thrice. Grease and dust a 6 " baking tin.Powder the sugar and sift it once.Keep the banana purée ready.

Using an electric heater beat butter and sugar well. Add lightly beaten egg. Beat well .Add vanilla essence and curd. Beat at low seed .

Now fold in flour and banana purée ,starting and ending with flour.Add 1tbsp of water if the batter is thick.

Now gently fold in cooked cherries.

Gently transfer the batter to the prepared pan.

Bake at 150 degree C for 35-40 mins or until done.
