Apple Peanut Cookies

Ingredients
- 1 cup Coarsely ground Roasted peanuts
- 1 1/2 cup All purpose flour/Maida
- 1 tsp Baking soda
- 1/4 cup Salted butter
- 3/4 cup Brown sugar
- 1 count Egg
- 3 tbsp Thick Apple purée
- 2 tsp Cinnamon powder

Sift the flour and baking soda thrice.

Pulse the roasted peanuts in a food processor for 2 minutes.

Cream butter and sugar well. Add gently beaten egg.

Add the sifted flour, cinnamon and coarsely ground peanuts.

Now mix in apple purée gently .

Knead for a minute and cling wrap the dough.

Refrigerate for 30-40 minutes.

Line a rectangular tin with parchment sheet.

Take 1 tbsp of dough and shape into a ball.

Flatten it gently and make a pattern on it using a fork.

Refrigerate it again for 20 minutes.

Meanwhile, pre heat the oven at 140 degrees C . Turn on the fan mode.

Bake the cookies at 140 degrees C for 20-22 minutes.

Transfer the cookies to a wire rack.Let it cool.
