Amarula Chocolate Raisin Cookies

Ingredients

  • 2 cup All purpose flour/ Maida
  • 3/4 cup Salted Butter
  • 1 tsp Baking powder
  • 1/2 cup Sugar
  • 50 g Chocolate
  • 1/4 cup Raisins
  • 6 tbsp Amarula

Directions

Chop the chocolate roughly into small pieces. I’m using 50 gms Of Lindt Excellence Caramel with a touch of sea salt. Transfer it into a medium sized bowl. Microwave the chocolate for 2-3 minutes.Turn off the heat . Keep it aside. Chop the raisins into small pieces.

Sift the flour and baking powder thrice.

Cream butter and sugar.

Add the sifted ingredients.

Add Amarula, melted chocolate and chopped raisins.Gently knead the dough of a minute or two.

Cover the dough with cling film and refrigerate for 1 hour.

Line a rectangular tin with parchment sheet.

Take 1 tbsp of dough. Shape it into a ball. Flatten the top a bit.

Transfer it to the prepared tin.

Refrigerate for 30 minutes.

Meanwhile pre heat the oven at 140 degrees C using the fan mode.

Bake the cookies for 18-20 minutes.

Remove the tin from the oven.

Transfer them into a wire rack. Let it cool.
